Kathi-rolls with Paneer

Meat-free Indian street food at its best! Kathi rolls are typically what people eat on the streets of Calcutta when they need something quick and tasty. Pack your Kathi rolls in a picnic basket or serve them on the table as a help-yourself lunch.

 

Method

Cut the paneer and pepper into cubes and the cauliflower into bite-sized pieces and set to one side.

Mash the peas with a fork or give them a quick chop with a mini food chopper.

Mix the mint with yoghurt, lime juice and a touch of salt.

Chop the onion finely then heat a pan with a little oil.

Add the turmeric, chilli, coriander, fenugreek seeds and ground nutmeg, sauté at high heat and then add the paneer, pepper and cauliflower and turn the heat down to medium.

Fry until the cheese and vegetables have a slight crust and give them a stir from time to time.

Spread a thin layer of mashed peas in a line across the middle of the tortillas.

Add the hot vegetable mixture and then fold the tortillas together.

Serve hot with mint dip or pack them for tomorrow’s packed lunch.
